1 cup Yummus® Hummus
1 medium avocado
1/4 cup cooked quinoa
1/4 cup chopped cilantro
Juice of half a lime
1 pinch of sea salt
1 iceberg or romaine lettuce
1 cup of sliced cherry tomatoes
Add the Yummus® Hummus and avocado to a large bowl. Mash with a potato masher or fork until chickpeas are broken up and the avocado is creamy.
Stir in quinoa, cilantro and lime juice. Season with salt and pepper, taste and adjust seasonings as necessary.
Add into lettuce leaves and top with desired toppings.
